  1. I do believe that new digital menu boards will be great for restaurant owners for lots of different reasons, such at not having to print up new menus when items change. But if you run head-to-head the amount of waste and consumption over the total lifetime of a restaurant with either digital menus or offline menus, I think the paper ones–even if they have to be reprinted several times/year–come out ahead in the eco game over all of the copper, tungsten, and other metals and plastics that go into screens and tablets–even if this hardware never has to be replaced. I don’t think that going with digital is an eco-argument, but an agility and wow factor argument.
